Cucumber, Hummus, and Mint Sandwiches

I’ve started to feel a little over-indulged on sweets after Halloween. Looking forward to even more decadent food during the rest of the holiday season, I thought it would be a good time to enjoy a simple, refreshing, and healthy dish.

I was inspired by this recipe after my sister, mom, and I enjoyed afternoon tea at the Tea List in downtown Davis. It’s a charming little shop hidden away from the busier areas of downtown and offers a relaxing way to spend the afternoon. If you ever happen to be passing through the area or plan to make a visit, I highly recommend the High Tea service. It’s a bit pricey, but includes a tea stand full of a variety of delicious sandwiches, pastries, fresh fruit, and of course some scones. The Tea List also accommodates both gluten and dairy allergies very well, making it a wonderful place to eat if you have dietary restrictions.

My favorite part of the meal were the tea sandwiches. We were served five different kinds: smoked salmon and caper, curry chicken salad, roasted balsamic vegetable, turkey and avocado, and cucumber mint. They were all delicious, but I was most intrigued by the cucumber sandwich. Traditional cucumber tea sandwiches are made with cream cheese, but this one had hummus instead. It also had the addition of fresh mint, which made for a very bright, fresh, and light sandwich.

This recipe is also a good example of simple ways to make sandwiches healthier without sacrificing flavor. Hummus has fewer calories and fat than cream cheese or mayo, plus it comes in all kinds of different flavors, so you’ll be sure to find one you like. The small amount of thinly sliced cucumber on the sandwich does not offer a large amount of nutrients, but it does add to your daily vegetable and water intake (cucumber is 96% water!). Lastly, the fresh mint, along with all other fresh herbs, adds amazing flavor with no added fat or calories.

Cucumber, Hummus, and Mint Sandwiches

  • 2 slices of bread (any kind)
  • 1-2 tablespoons of your favorite hummus
  • 1/4 english cucumber, sliced very thin
  • Fresh mint leaves

Spread hummus on both pieces of bread. Place cucumber slices on one piece of bread, creating an even layer. Cover the other piece of bread with a layer of whole mint leaves. Sandwich together and slice in half.

  1. Huh so simple. I have never been a big sandwich person – for me I would much rather just have cucumber slices and hummus. Though this has inspired me to try making a mint hummus spread.

  2. In Israel and all over the Middle East we’re used to eating Hummus wit Pita bread but hey, you can’t go wrong with Hummus so spreading it on bread is just as good.
